Almond tapenade
Ingredients
- 100 g almonds
- 2 cloves of garlic
- 75 g sun-dried tomatoes in oil
- 150 g feta cheese
- 150 g black olives
- 2 tbsp mayonnaise
- 1 tbsp olive oil
- freshly ground pepper and sea salt
Preparation
Put all the ingredients in a large measuring jug and purée them roughly using a hand blender.
If the tapenade is too thick, add a little olive oil or mayonnaise.
You can also substitute other types of cheese for the feta.
Delicious on Melba toast or crusty bread.
