Almond curls

Ingredients

  • 300 g unsalted white almonds
  • 8 eggs
  • 1 dl cold water
  • 600 g sugar
  • 1 /2 tbsp lemon rind
  • 200 g flour

Preparation

Preheat the oven at 175˚C. Roughly chop the almonds. Beat the eggs in a bowl with 1 dl of cold water. Mix the chopped almonds with the sugar and the lemon rind into the egg and water mixture, and then sift in the flour. Mix these ingredients thoroughly into a smooth batter. Leave it in the refrigerator for approx. 1 ½ hrs. Cover a baking tray with baking sheet. Using a teaspoon, spoon the batter into little mounds on the baking sheet, leaving approx. 5 cm. between them. Level the mounds out slightly with the curved back of a spoon. Bake the almond curls in the middle of the oven for approx. 10 min. Lift the biscuits directly from the baking tray and, whilst they are still as hot as possible, place them over a rolling pin or bottle, rounding them slightly. Allow the almond curls to cool.
