Cashew rosti

Ingredients

  • 3 large (sweet) potatoes
  • chives, roughly chopped
  • 50 g salted cashew nuts, finely chopped
  • sea salt
  • freshly ground pepper
  • olive oil

Preparation

Peel the potatoes and grate them using the coarse grater. Mix the chives and cashew nuts into the grated potatoes. Bring to flavour with sea salt and freshly ground pepper.

Shape the potato mixture into small cakes and fry them in a little olive oil in a frying pan until they are brown and crispy. They can also be baked in the oven at 180˚C.
