Chicken satay skewers with peanut sauce
Ingredients

- 500 g chicken breast fillet
- 2 tbsp. sesame oil
- 4 tbsp. soy sauce
- 1 tsp. turmeric
- 1 tbsp. honey
- 1 tsp. coriander, ground
- ½ tsp. chillies

- 1 onion
- 2 tbsp. soy sauce
- 2 tbsp. sweet chilli sauce
- 150 g crunchy peanut butter
- a little water
- paprika powder, chilli powder

- 50 g peanuts, roasted, unsalted
- 240 g rice
- ½ cucumber, finely sliced
- wooden skewers
Preparation:
1. To prepare the marinade, place all ingredients in a bowl and mix. Dice the meat to produce pieces of around 1 cm, and add to the marinade. Place for at least 2 hours in the refrigerator. Similarly, place the wooden skewers in a glass of water for around 2 hours.
2. After marinating the pieces of meat, thread them onto the skewer and pan-fry.
3. Dice the onion coarsely and sauté in a pan until translucent. Add the soy sauce and sweet chilli sauce.
4. Add the peanut butter and stir all the ingredients well. Then add just enough water to produce a creamy but not too runny sauce. Season with paprika powder and/or chilli powder.
5. Once prepared, place the skewers on a plate, cover with peanut sauce and garnish with chopped peanuts.
6. Rice and raw fruit and vegetables, such as cucumber, go well with this dish.
