Peanut wedges

Ingredients

  • 150 g flour
  • 65 g butter
  • 65 g sugar
  • 1 tbsp. vanilla sugar
  • 1 tsp baking powder
  • 1 egg
  • 80 g apricot jam
  • 200 g roasted, unsalted peanuts
  • 120 g sugar
  • 120 g butter
  • 2 tbsp. water
  • 100 g chocolate coating (white, milk or dark chocolate)

Preparation:


1. Knead a dough using the first six ingredients. Roll out onto baking paper measuring approx. 25 x 30 cm

 

2. Brush with the jam

 

3. Chop the peanuts finely. Melt the sugar and butter in a pan, boil with the water briefly and add peanuts. Bring to the boil again and let the mixture cool slightly, then spread over the dough. Leave a clearance of approximately 1.5 cm at the edge, as the upper layer runs during baking.

 

4. Bake at 180 °C upper/lower heat or 160 °C circulating air for about 25 minutes in a pre-heated oven until the peanuts are caramelised and lightly browned.

 

5. Remove from the oven and carefully cut into squares, then into triangles and allow to cool.

 

6. After cooling, dip two sides in chocolate coating and allow to set at room temperature.
