Pistachio pesto
Ingredients
- 250 g pistachio kernels
- 100 g ground parmesan
- 40 g fresh basil (1 bunch)
- 2 cloves of garlic
- 250 ml olive oil
- A pinch of salt
- A pinch of pepper
Method:
1. Chop the pistachios in a blender or a mortar.
2. Mash he pistachios and the remaining ingredients (basil, parmesan and garlic) in a blender.
3. Mix all ingredients well and add oil until the desired consistency has been achieved.
4. Finally, season the pesto with salt and pepper.
Hint: Pistachio pesto tastes best with spaghetti.
