Pistachio nut rice
Ingredients
- 300 g basmati rice
- olive oil
- 500 g shoarma lamb
- 2 sweet peppers, e.g. green and red, chopped
- 70 g pistachio nuts, peeled
- 10 apricots, (previously steeped) chopped
Preparation
Boil the rice following the instructions on the packet.
Heat some olive oil in a pan and stir-fry the meat until it is cooked and golden brown.
Then add the boiled rice, peppers, pistachio nuts and apricot to the lamb and mix well.
Allow to warm through for 1 minute.
