Peanut and avocado crème
Ingredients
- 1 avocado, fully ripe
- 1 handful peanuts
- 1 clove of garlic
- 1 small onion
- 100 ml vegetable stock
- salt and pepper
- a little pumpkin seed oil
Preparation:
1. Halve the avocado, remove the kernel and scrape out the flesh of the fruit from the shell using a spoon. Place in a tall beaker; add peanuts, garlic and chopped onion.
2. Purée using a hand blender, adding vegetable stock until the desired consistency is reached. Season to taste with salt and pepper and add a dash of pumpkin seed oil.
The nutty flavour of the oil is complementary, rendering the green of the crème more intense. Goes well with salmon, pasta and tortilla chips.
