Carrotcakes with macadamias

Ingredients

  • 280 g soft brown sugar
  • 185 ml vegetable oil
  • 3 eggs
  • 200 g flour
  • 5 tsp baking powder
  • 2 tsp cinnamon powder
  • pinch of salt
  • 150 g grated carrots
  • 75 g macadamias, unsalted
  • cake tins
  • icing sugar mix

Preparation

Preheat the oven to 180˚C.

Beat the sugar and oil for approx. 3 minutes until it becomes a homogenous mass.

Add the eggs 1 for 1 and mix well in.

Add the flour, baking powder, cinnamon powder and salt to the sugar and oil mixture.

Add the grated carrot and macadamias and mix well.

Divide the mixture among the cake tins and bake in the preheated oven for approx. 20 minutes. Test with a cake tester to see if the cakes are ready.

Prepare the icing sugar mix following the instructions on the packet; ice the cakes using a piping bag.
