Spinach Salad with Grapes, Gorgonzola and Cashew Nuts

Ingredients

  • 200 g fresh spinach leaves
  • 150 g red grapes
  • 3 tbsp cider vinegar
  • 2 tbsp hot mustard
  • 1 tbsp honey
  • 3 tbsp olive oil
  • Salt and pepper
  • 100 g Gorgonzola
  • 75 g roasted cashew nuts
  • 50 g dried apricots

Preparation

Trim, wash and spin-dry the spinach.

Wash and halve the grapes, removing seeds if necessary. Combine cider vinegar, mustard, honey and olive oil to make the dressing and season with salt and pepper to taste.

Mix spinach, grapes and dressing in a bowl.

Thinly slice the Gorgonzola.

Serve the spinach and grape mix garnished with cashew nuts, dried apricots and slices of Gorgonzola.

The salad tastes best served with baguette and a crème fraiche dip or aioli.
